YES, I'M OBSESSED WITH MY SPIRALIZER... STILL. |
It has been a long time since I participated in WIAW at Peas & Crayons. How long ago? Let me put it like this: Jenn was still pregnant and her precious daughter is now 1 year old. Yeap... that long. And the things is I keep forgetting to take pics of what I eat because I am too busy inhaling my food {I blame basic training years ago for this!} so there goes that. Luckily this week I went back to my recipes archives and made a few of my recipes. And BAM! Instant photos.
So, what did I eat? Nothing but goodness since I came back from Minnesota because the last few days there I indulged a lot. Can you say the Louisiana Purchase dish at Buzzard Billy's in Lacrosse, WI? It was SO good! Nothing but fried crawfish, fried alligator tails and fried oysters served with hush puppies, horseradish mashed potatoes and coleslaw. Yeah... I was in a food coma after only eating half of the ginormous dish. We had plenty of leftovers to take home. So I've been trying to keep it clean since then.
I have 5-6 small meals a day (the 6th is normally a protein shake if I do a hard workout) and mostly they stay the same for the entire week-- I love leftovers and it works for me. This week my meals were pretty simple and taking advantage of the last weeks of summer produce {insert booboo lip here}.

I also always prepare one extra meal that I can switch for whatever lunch or dinner I am having, in case I have a taste for something different. Right now, I'm loving roasted tomatoes and zucchini noodles {hello, spiralizer!} with tons of flavors from garlic and rosemary. Simply delicious.

Your meals look so healthy and good! Last night we had pork tenderloin and a potato, bean, roasted red pepper salad with a Dijon dressing.

ReplyDeleteThanks for the sweet words! And yes! Everyone should own a spiralizer! lol. Mine is from a brand called Paderno and it was about $35 box. I use this kitchen gadget more than any other.
