If you asked me what my favorite type of food a few years ago I would have said Italian. But over the past few years I have become very intrigued with Asian food-- especially Thai and Vietnamese food. Whether it is the Banh Mi sandwich or chicken Pad Thai, I say bring it on! However what I love about these two types of cuisine is their emphasis on the produce used. It is all about fresh and healthy veggies.
This cuisine inspires me to eat cleaner and healthier. And with the fall now here, the one thing I will miss about the summer is the flavors, which are so reminiscing of my beautiful island. Those are flavors I can eat any day of the week. Fortunately, the produce still abounds for another month and these rolls are the perfect way to capture the summer's last hurra! in one delicious bite.
These rolls have on more thing I love that I have mentioned about many of my recipes: easy to make. In this on the hardest part is managing the rice paper sheets. But once you get practicing, they are simple to manage and roll. If that does not work, try using lettuce leaves or cabbage leaves to wrap them. When I do use cabbage, I find that savoy cabbage works really good.
