Yes my friends, I am still unpacking boxes. Between the move, my dad's passing and the new job, I've barely had time to get a few things set up at the new digs. This weekend I made headway in the home office and while looking through the boxes I came across a box of photos and talk about a blast from the past! A past life where I was a fashion model!
You may not believe it, but when I was younger, I did the whole modeling thing, and loved it! Check out some of the pics! Ha! I can't get over how time has kicked my butt! Haha! Aww...I used to be pretty...what the heck happened?
I got a kick out of these one. And the boyfriend, bless his heart, told me I still look as beautiful. I'm thinking I'm going to keep him! What do you think ladies?
But these photos remind me that once upon a time, I used to eat anything and I would not gain any weight. I was 6'1" weighing 135, which looking back was severely skinny. Mind you, when these photos were taken, I was on a full blown Puerto Rican diet of I don't even know how many calories. Now? Not so much. With age, a complete thyroidectomy and slower metabolism, I have to be mindful of not only what I eat but also how I treat my body. Depending on what type of workout I do, it is how my body wants to be fed. I listen very carefully because it goes through phases either when I crave tons of protein or when I just crave veggies. And the later is the phase I am going through right now.
Maybe it is the hot weather but all I can eat right now is light food, that it is not over cooked, and that is fresh and homemade, and these Quinoa Black Bean Patties fit the bill just right. They are delicious and so good for you! Here is the simple recipe:
Packed with plant-based proteins, these patties are delicious on their own or as a "burger" although I think eating this on a bun may be too much. I like to serve with some fresh guacamole or drizzle with some sriracha. Even better it is the fact that you can make these and freeze them, so you can make a lot of it and bake in batches. Let's talk real quick about flavors. Because there are no strong flavors on these patties, you can add whatever spices you want to suit your mood; one of my favorites is chipotle chili powder. So good. Give them a try. You will highly enjoy these!
